Ingredients:

  • 1 block of firm or extra-firm tofu, pressed and sliced into cubes or rectangles
  • 2 tablespoons olive oil
  • 2 tablespoons low-sodium soy sauce
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and black pepper to taste
  • Lemon slices and fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Press the tofu to remove excess water by placing it between two paper towels or clean kitchen towels with something heavy on top. Leave it for at least 15-20 minutes. Slice the pressed tofu into cubes or rectangles.
  3. In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, dried thyme, salt, and black pepper.
  4. Place the tofu cubes in a shallow dish and pour the marinade over them. Gently toss the tofu to ensure even coating. Let the tofu marinate for at least 15-30 minutes. The longer it marinates, the more flavor it will absorb.
  5. Arrange the marinated tofu on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the tofu is golden and slightly crispy on the edges, flipping the pieces halfway through for even cooking.
  6. Remove the baked tofu from the oven and let it cool for a few minutes. Garnish with lemon slices and fresh parsley if desired. Serve the lemon garlic baked tofu over a bed of quinoa or brown rice, or alongside your favorite steamed vegetables.
