Ingredients:
- 1 block of firm or extra-firm tofu, pressed and sliced into cubes or rectangles
- 2 tablespoons olive oil
- 2 tablespoons low-sodium soy sauce
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- Salt and black pepper to taste
- Lemon slices and fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Press the tofu to remove excess water by placing it between two paper towels or clean kitchen towels with something heavy on top. Leave it for at least 15-20 minutes. Slice the pressed tofu into cubes or rectangles.
- In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, dried thyme, salt, and black pepper.
- Place the tofu cubes in a shallow dish and pour the marinade over them. Gently toss the tofu to ensure even coating. Let the tofu marinate for at least 15-30 minutes. The longer it marinates, the more flavor it will absorb.
- Arrange the marinated tofu on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the tofu is golden and slightly crispy on the edges, flipping the pieces halfway through for even cooking.
- Remove the baked tofu from the oven and let it cool for a few minutes. Garnish with lemon slices and fresh parsley if desired. Serve the lemon garlic baked tofu over a bed of quinoa or brown rice, or alongside your favorite steamed vegetables.
